To get rid of odours and smells, it helps to have a little understanding of what causes them. First let’s look at what affects us in the hospitality industry. Some might not appreciate that occasionally when you smell a particular odour it is an indication that there is a problem that needs to be rectified quickly. From that point of view they can sometimes be useful.

Most of the odours that we come across in hotels are generated by two main elements, bacteria and chemicals. The most common areas that they occur in are Rest Rooms/ Toilets, Bedrooms, Kitchens and Waste storage areas. There are other minor areas which can blow up from time to time but these generally do not require the same attention.

The two main sources of bad smells that create problems in the hospitality industry are generated from bacteria or chemical or even a combination of both.

Bacteria

Bacteria can give off different types of smells that can come from spilled food, milk, mould and fungi (from dampness), urine and faecal, cross contamination, stagnant water and some of these sources can produce toxins while many can cause allergies. The majority are responsible for odours that can damage your reputation.

Chemicals

Chemicals particularly fragrances and cleaning chemicals can be allergenic. The fragrances in many cases are used to mask the odour while cleaning chemicals can be toxic and off-gas as they do in some furniture and building material and electrical products. The electrical product off gassing can be from built in flame retardants and certain types of lamps. There can also be reactions with certain types of housings like plastics etc.

In restrooms for example getting rid of bad smells can be more difficult after heavy usage. Most of us are familiar with bacterial odours from mould to the smell of stale milk, body odours and so on but most of us are not so familiar with chemical odours. Here is a list of common chemicals that may be useful for you to identify by odour.

Chemical – Description of odour

Acetone - A pungent smell.
Acetic acid – A smell like vinegar.
Acetaldehyde – A penetrating and pungent type of suffocating odour.
3-methyl-1H-indole - A putrid type of fecal smell.
Acetonitrile – A sweet ethereal smell.
Acetophenone – Sweet pungent odour of jasmine or orange blossom.
Acrolein – A burnt sweet small.
Acrylic acid – An acrid smell.
Acrylonitrile – This can smell garlic like or even pungent onion like.
Allyl alcohol – An irritating smell to the nose.
Allyl chloride – This has a bad garlic/onion type of smell.
Ammonia – This has a fast irritating pungent smell.
Benzaldehyde – Has a taste of bitter almonds.
Benzene – Has a smell that could be described as sweet.
Captan – has a bad pungent smell.
Carbon disulfide – A sweet pleasant chloroform type of small.
Chlorine – Smells like bleach.

Ethanol – Smells like alcohol.
Ethyl alcohol – This is sweet smelling.
Ethyl mercaptan – This has a garlic like odour.
Formaldehyde – This gives off a suffocating pungent odour.
Hexanoic acid – A sharp sour rancid smell often described as goat like.
Hydrogen sulphide – Smells like rotten eggs.
Methanol – Smells sweet.
Methyl mercaptan – Smells like rotten cabbage.
Nonyl alcohol – Often described as offensive type of odour.
Phenol or Carbolic acid – A strong sweet smell.
Pyridine – A sour putrid fishy smell.
